You can’t call yourself a true food-lover if you haven’t heard of Carousel. This creative hub in Marylebone is the go-to platform for chefs to flaunt their skills to a hip foodie following in London. More warehouse than white tablecloths, Carousel’s restaurant is headed up by co-founder Ollie Templeton who commandeers the lunch service before shadowing their resident chef in the evening. More than a mere restaurant, Carousel’s multi-storey hub attracts visitors not just for the food, but also for their roster of workshops and creative events. So there’s no denying that their formula of creativity and collaboration is a winning one. Which is why we invited Ollie and his head Sommelier, Matt Varona to The Peligoni Club on 19th June to wine and dine fifty lucky guests in our outdoor restaurant. Ahead of the event, we met with them for a quick lowdown on all things food and drink related.

The best thing about Carousel is… everything, I personally love it all, working with the team in the kitchen is a joy, inviting guest chefs from across the world and introducing them to British products and seeing how their stories unfold on a plate.
My desert island dish is…. fried chicken sandwich.
When I’m not cooking I’m…. eating, drinking nice wine, lying down in the park reading something, going on bike rides or spending time on the beach.
My greatest inspiration is…. travel, every time I go somewhere new I am inspired and that is reflected on what we do in the kitchen.
A memorable meal is made of… having as much fun as possible and eating things that surprise you, make you think, change your perspective.
The best dinner guest is… someone who is up for everything.

My desert island drink is… Bacardi and Cola.
When I’m not concocting fabulous drinks I’m… collecting Pokemons, its weird I know but it just stuck with me.
My greatest inspiration is… Jesus, his beard is unreal, I wish mine was like his.
A memorable wine is… something with character, stands out, smells like a barn yard but tastes amazing.
